We find cabbage in the market all year round but right now what you find in your local farmers market is?exceptional. ?There are several?varieties?and colors.
Is it healthy? Certainly. ?Cabbage if full of?antioxidants and?vitamins and minerals?plus?low in fat and calories. ?High in vitamin K which promotes?healthy?bones. ?It is known as a natural?detox.
The anti-inflammatory?effect is at a moderate level and the?glycemic?load is low.
I would say we see the coleslaw thing the most but we add it to?salads,?make soup, and stuff it with?meat and?fruit. ?Hey where does?Sauerkraut?come from?
I am always?frying?up the stuff, olive oil of course. with?Cajun?Sausage?or?brats. ?A few years ago a friend put together some soup. It was great but he?doesn?t?remember what all he put in it. The soup is always good but that one batch was top flight. ?That?s what interested me and I started making the soup.
The cool damp weather has me making a batch today.
